Ingredients

  • 1 (6- to 8-ounce) lobster tail from Lombardi’s, cut in half lengthwise
  • 1 (10- to 12-ounce) tenderloin steak
  • 1 tablespoon fresh herbs (rosemary, thyme, parsley), chopped fine
  • 1 teaspoon all-purpose seasoning blend
  • 1 teaspoon olive or vegetable oil, for cooking
  • 10–12 ounces snap beans, snapped at stem
  • ½ teaspoon fresh garlic, chopped fine
  • 1 tablespoon herb-citrus butter, plus additional melted butter for dipping
  • ½ lemon, squeezed
  • Sea salt and fresh ground pepper, to taste

Preparation

  1. Prepare the Beef Tenderloin:
    • Preheat a medium sauté pan over medium-high heat.
    • Season all sides of the tenderloin with ¾ of the seasoning blend and half of the chopped herbs.
    • Add the cooking oil to the pan, then carefully place the beef into the preheated pan.
    • Cook for 2 to 4 minutes per side. Remove the tenderloin when the desired doneness is achieved. Let rest and top with a pat of herb-citrus butter to melt and create a flavorful sauce.
  2. Cook the Lobster and Snap Beans:
    • Season each half of the lobster tail with the remaining seasoning blend and herbs.
    • Place the lobster halves, cut side down, into the same pan used for the beef, along with the snap beans.
    • Cook the lobster for 3 to 4 minutes, then turn over and cook until the meat is opaque in the center, about 3 minutes.
    • The snap beans should finish cooking alongside the lobster. Adjust cooking time based on desired crunchiness.
  3. Finish the Dish:
    • Remove the lobster and snap beans from the pan.
    • Toss the snap beans with fresh garlic and a squeeze of lemon juice.
    • Squeeze additional lemon juice over the cooked lobster tails for a bright finish.
    • Serve the tenderloin, lobster, and snap beans together on a large plate, garnished with extra herb-citrus butter for dipping.
