Ingredients

  • 4 (6-ounce) flounder fillets from Lombardi’s
  • 3 cups fresh spinach
  • 3 lemons (2 sliced, 1 juiced)
  • 1 cup breadcrumbs
  • ½ cup Parmesan cheese, grated
  • 2 tablespoons butter, melted
  • 1 tablespoon oil (for cooking)
  • Sea salt and freshly ground pepper, to taste

Preparation

  1. Prepare the Dish:
Preheat your oven to 400°F. Lightly oil an oven-proof dish and line the bottom with thinly sliced lemons. Set aside.
  2. Sauté the Spinach:
Heat a sauté pan over medium heat and add the oil. Add spinach to the pan, cooking for 2 minutes or until wilted. Season lightly with salt and pepper.
  3. Make the Filling:
Remove the spinach from heat and mix in the lemon juice, breadcrumbs, and Parmesan cheese. Stir until evenly combined.
  4. Assemble the Roulades:
Season both sides of the flounder fillets with salt and pepper. Spread an even layer of the spinach mixture over each fillet. Carefully roll up each fillet and place seam-side down on the prepared lemon slices in the dish.
  5. Top and Bake:
Brush the tops of the roulades with melted butter and sprinkle with additional breadcrumbs. Season lightly with salt and pepper. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily.
  6. Finish and Serve:
Remove the dish from the oven and drizzle with fresh lemon juice. Serve warm with your favorite side dishes and enjoy the bright, fresh flavors of this seafood classic.
