Ingredients:
- 4 (6-ounce) snapper fillets
- ½ pound medium shrimp (Key West Pink Shrimp or your favorite variety), peeled and deveined
- 4 cloves garlic, minced
- 3 shallots, minced
- 1 tablespoon capers
- 1 tablespoon pimentos, diced
- ½ cup white wine
- ½ cup bottled clam juice
- ½ teaspoon coarse ground black pepper
- ½ cup fresh parsley, minced
- 12 ounces vermicelli or angel hair pasta, cooked
- 3 tablespoons olive oil
- 3 tablespoons butter
- Sea salt, to taste
Preparation:
- Sauté Aromatics
Heat olive oil and butter in a large sauté pan over medium heat. Add garlic and shallots, cooking for 2 minutes while stirring frequently to prevent browning. - Build the Sauce
Increase heat to medium and add capers, pimentos, white wine, clam juice, and black pepper. Simmer for 2 minutes, allowing the flavors to meld. - Cook the Snapper and Shrimp
Gently place the snapper fillets into the pan, ensuring they are coated in the sauce. Reduce heat to medium-low and simmer for about 5 minutes.
Add the shrimp, spreading them evenly across the pan, and cook for an additional 3 minutes or until the shrimp are pink and the fish is cooked through. - Finish and Serve
Stir in minced parsley and season with sea salt to taste. Serve the snapper and shrimp over cooked pasta on individual plates. Generously spoon the scampi sauce over the top and enjoy!
