Ingredients
- 1 pound lobster, cooked and cut into medium-sized chunks (Maine lobster or Florida spiny lobster)
- 3 large tomatoes, sliced
- 1 pound pasta (your favorite shape), cooked
- 4 tablespoons unsalted butter
- 2 large garlic cloves, minced
- ½ cup red onion, finely chopped
- ¼ cup all-purpose flour
- 3 cups milk, at room temperature
- 1 ½ cups sharp Cheddar cheese, grated
- 1 ½ cups Gruyere cheese, grated
- 1 tablespoon Dijon mustard
- ½ cup fresh chives, finely chopped
- ¼ teaspoon cayenne pepper
- 1 cup panko
- 1 tablespoon olive oil
- ¼ cup flat-leaf parsley, finely chopped
- Sea salt and fresh ground pepper, to taste
Preparation
- Cook the Pasta
Cook pasta until al dente according to the package directions. Drain and set aside. - Make the Cheese Sauce
In a medium saucepot, melt 4 tablespoons of butter over medium-low heat. Add garlic and onion, cooking until the onion becomes translucent. Whisk in the flour and cook for several minutes, stirring constantly. Slowly pour in milk while whisking, then bring the mixture to a boil over medium heat. Continue whisking until the sauce thickens and coats the back of a spoon. - Add the Cheese
Remove the sauce from heat and gradually whisk in the cheeses, one handful at a time, until fully melted. Stir in Dijon mustard, chives, cayenne pepper, salt, and pepper to taste. - Assemble the Dish
In a large mixing bowl, combine the cheese sauce with the cooked pasta. Gently fold in the chopped lobster. Lightly spray a baking dish with pan release spray and pour the pasta mixture into the dish. Arrange the tomato slices evenly on top. - Add the Topping
In a small bowl, mix the panko, olive oil, and parsley. Sprinkle this mixture over the tomatoes. - Bake
Preheat your oven to 375°F. Bake the lobster mac & cheese for 10 to 20 minutes, or until the topping is golden and the cheese sauce is bubbling. Allow the dish to cool slightly before serving.
