Ingredients

  • 2 dozen fresh oysters from Lombardi’s, shucked and on the half shell
  • 1 stick unsalted butter
  • Hot sauce, to taste
  • 2 tablespoons fresh parsley, chopped fine
  • 3 lemons (1 juiced, 2 sliced for garnish)
  • 1 tablespoon fresh garlic, chopped fine
  • 1 teaspoon seafood seasoning blend
  • ¼ cup Parmesan cheese, grated
  • ¼ cup panko or regular unseasoned breadcrumbs
  • 1 teaspoon olive oil
  • Sea salt and fresh ground pepper, to taste

Preparation

  1. Prepare the Butter Mixture:
    • Preheat the oven to 400°F.
    • In a small saucepan, combine butter, hot sauce, garlic, seafood seasoning blend, and lemon juice.
    • Melt over medium-low heat and season with salt and pepper to taste. Adjust with additional lemon juice or hot sauce as needed. Remove from heat and set aside.
  2. Make the Breadcrumb Topping:
    • In a small mixing bowl, combine breadcrumbs, Parmesan cheese, olive oil, and parsley.
    • Mix thoroughly with a fork and set aside.
  3. Assemble the Oysters:
    • Arrange the oysters on the half shell on a cookie sheet.
    • Spoon an even amount of the melted butter mixture over each oyster.
    • Sprinkle the breadcrumb mixture evenly over the top of each oyster.
  4. Broil the Oysters:
    • Switch the oven setting to broil and carefully place the oysters under the broiler.
    • Broil for 2 to 3 minutes, watching closely to avoid burning. The oysters are ready when the topping is golden and bubbling.
  5. Serve and Garnish:
    • Remove the oysters from the broiler and allow them to cool slightly.
    • Serve warm with any leftover butter mixture and garnish with lemon wedges.
