Ingredients
- 2 dozen fresh oysters from Lombardi’s, shucked and on the half shell
- 1 stick unsalted butter
- Hot sauce, to taste
- 2 tablespoons fresh parsley, chopped fine
- 3 lemons (1 juiced, 2 sliced for garnish)
- 1 tablespoon fresh garlic, chopped fine
- 1 teaspoon seafood seasoning blend
- ¼ cup Parmesan cheese, grated
- ¼ cup panko or regular unseasoned breadcrumbs
- 1 teaspoon olive oil
- Sea salt and fresh ground pepper, to taste
Preparation
- Prepare the Butter Mixture:
- Preheat the oven to 400°F.
- In a small saucepan, combine butter, hot sauce, garlic, seafood seasoning blend, and lemon juice.
- Melt over medium-low heat and season with salt and pepper to taste. Adjust with additional lemon juice or hot sauce as needed. Remove from heat and set aside.
- Make the Breadcrumb Topping:
- In a small mixing bowl, combine breadcrumbs, Parmesan cheese, olive oil, and parsley.
- Mix thoroughly with a fork and set aside.
- Assemble the Oysters:
- Arrange the oysters on the half shell on a cookie sheet.
- Spoon an even amount of the melted butter mixture over each oyster.
- Sprinkle the breadcrumb mixture evenly over the top of each oyster.
- Broil the Oysters:
- Switch the oven setting to broil and carefully place the oysters under the broiler.
- Broil for 2 to 3 minutes, watching closely to avoid burning. The oysters are ready when the topping is golden and bubbling.
- Serve and Garnish:
- Remove the oysters from the broiler and allow them to cool slightly.
- Serve warm with any leftover butter mixture and garnish with lemon wedges.
